CASHEW MELTS (COOKIES)

This recipe was in a recent copy of the Gypsy Journal, submitted by Terry Russell.

1 cup butter (room temp)
1/2 cup powdered sugar
1 tsp vanilla
2 cup all-purpose flour
1/8 tsp salt
2 cup finely chopped salted cashews
1 1/2 cup powdered sugar, for rolling

Beat together butter and 1/2 cup powdered sugar. Add vanilla. Combine flour, salt, nuts and add to butter mixture. Stir until it holds together, then roll into 1" balls. Place on ungreased cookie sheet (can be close together, (they do not spread) and bake in preheated 350 degree oven for 15 minutes (lightly browned). While still hot, roll in powdered sugar, then set on another cookie sheet to cool. When cool, roll again in powdered sugar.
